Dish on the Road: Austin: Cover 3

We headed down to Austin for 24 hours last weekend and I had one of the best brunches I have had in a LONG time. We started out with mimosas and the waitress brought us out muffin tops. OMG. They were a mixture of cinnamon sugar and blueberry muffin tops with whipped butter. It tasted just a like a warm piece of delicious cake. After that, we ordered the triple. This was salsa, guacamole, and white queso served with warm parmesan chips. The guacamole had big, fresh chunks of avocado and was topped with a mild pesto. The queso was thick and creamy and the chips were a nice salty compliment . So far, we were off to an amazing start.

We had several people in our party. Jessica ordered the Cover 3 salad. This came with mixed greens, candied walnuts, apples and goat cheese. All mixed in a raspberry vinaigrette.

Nate ordered the Hickory burger and made it a double. This consisted of double meat, applewood smoked bacon, and cheese all served up on a bun with a side of fries. If I hadn’t of been so full with my meal, I would have loved to have tried a bite.

Morgan and I split the chicken fried beef tenderloin. Yummmm! This came served with fresh snap green beans and a hearty helping of tasty homemade mashed potatoes and cream gravy. The breading on the tenderloin was perfectly crisp and the meat was very tender. Side note: Even though we ordered one to split, they brought us two separate plates. That is always a HUGE plus in my books.

We also ordered a side of the mac and cheese. This simply melted in our mouths. Rest assured, this was completely devoured before we left the table.

All in all, this place is a winner. The food is simple yet scrumptious and the staff is extremely friendly. Next time you are in Austin, I would recommend stopping in at Cover 3. It left a smile on all three of our faces:)
